    12317370_854653037987909_690188618_nThanksgiving is over and now there are tons of leftovers in the house.  Of course, eating leftovers “as is” tastes great, but after 2 days of the same meal for breakfast, lunch, and dinner, a little change might be welcome.  If you do a quick sweep through of the refrigerator and pantry, you will probably be able to turn some of those leftovers into brand new meals.  You just have to know what you are looking for.

    A standard Thanksgiving side dish at mostly everyone’s table is Stuffing.  It can be made hundreds of different ways.  One major similarity I’ve seen on all Thanksgiving tables that I have come across is the amount of Stuffing that has been made.  No matter where I go, there is always a ton of Stuffing and unless it’s your Aunt Ruth’s favorite food or your dog Sparky sticks his head in the bowl, the amount of Stuffing left over is enormous.

    IMG_8150In order to make the most out of Stuffing leftovers, I came up with a super simple recipe that will give this side dish a bit of a facelift.  By creating new dishes out of these leftovers, you won’t be wasting food already made or making additional food that is unnecessary.  It’s a win-win!  So, what did I come up with?  Stuffles!  Stuffing-Waffles!

    This is what you will need, in addition to the Stuffing:

    • Colman’s Mustard

    • Shredded Mozzarella Cheese

    • Non-stick Spray

    • Cranberry Sauce (optional)

    • Gravy (optional)

    • Spray waffle iron/griddle with non-stick spray and pre-heat to 400 degrees.

    • For every 1 cup of stuffing, use 1 tsp of Colman’s Mustard and 1/4 cup of Mozzarella Cheese.   Adjust the amount of “batter” you make based on the size of the waffles and number of waffles being made.  Mix all of the ingredients together until blended evenly.

    • Drop large spoonfuls onto waffle griddle and cook until golden brown.  Cooking time may vary but you’re looking at somewhere around 8-12 minutes.  When done, carefully remove waffles from the griddle.

    • Top waffles with leftover cranberry sauce or gravy.

     ** There are lots of different options of mix-ins for these Stuffles, but it’s important to note that the Colman’s Mustard provides a flavorful kick to the Stuffing.  The Mozzarella Cheese acts as an adhesive and keeps the Stuffles intact while maintaining a mild enough flavor to not overpower the Stuffing itself.
