Last night I baked a cake. I used Pillsbury Funfetti cake mix because it’s pretty, it tastes good, and it’s easy. All you need is to grab some oil, water, and eggs, put them in a bowl with the dry cake mix, and stick it in the oven. Okay, the steps might be slightly more complicated than that and I don’t recommend following the previous sentence as a step by step recipe guide, but you get the point.
As a little girl, I loved to make Funfetti cakes because of the colorful sprinkles mixed in. It was always so much fun to take a bite and see what colors were inside. Apparently, Funfetti has “matured” over the years and there are now an infinite number of colorful options to try. Of course, you can still make the basic white cake options, but listed on the box are also instructions for making a “swirl” cake using food coloring. I HAD to try this!
I scooped out 3/4 cup of cake batter into a mixing bowl and another 3/4 cup into another. In each bowl, I added drops of food coloring, based on the color chart provided on the Funfetti cake mix box. I decided to make one bowl pink and the other bowl blue. Once I mixed the colorful batters up, I alternatively scooped the three different batters into two 9 inch round baking pans to be put in the oven.
I have to say, the cake it’s self doesn’t look too pretty when it’s done cooking in the oven. Everything becomes tinted golden brown and I became a bit concerned about what it will look like once I cut out a slice. Since the cake needed to cool completely before it could be frosted, I left it overnight and decided to assemble and decorate in the morning.
This morning, May 29, 2015 was a lot of fun, and a little bit messy! I chose to use Hot Pink Funfetti frosting, to cover the cake. This is also an option that I did not have growing up. We bought the White Funfetti frosting that came with the separate compartment of sprinkles because that was more or less the only options. Funfetti frosting currently comes in tons of different colors and some of them are even flavored. They also have different types of decorating sugars or sprinkles that come with the frosting containers.
Using a frosting spreader, I enveloped the entire cake in hot pink frosting. Pillsbury makes a product called Easy Frost which is basically frosting in a can with interchangeable tips for making shapes and designs. I used chocolate and vanilla Easy Frost to make little stars around the perimeter of the cake. I sprinkled the hot pink sugar crystals that came with the hot pink Funfetti frosting around the tops of the chocolate and vanilla stars as well as around the sides of the cake to give it a bit of sparkle. The last step in my cake decorating was adding the colorful sprinkles. I lightly shook out a handful of sprinkles along the top of the cake to match the inside Funfetti sprinkles.
After a quick clean up of the kitchen, it was cake cutting time! I couldn’t wait to see what the inside of the cake looked like with the pink and the blue food coloring. Very carefully, I took a cake knife and managed to pull out a wedge without disrupting the decorations. I put my slice of cake on a plate and smiled. I’m not ashamed to admit that I was pretty impressed with myself and how nice this cake looked! Who knows, maybe I found my life’s calling.
