• Marshmallow Lollipop Recipe

    11241339_431178853708821_1620858204_nOne of my favorite things to eat are chocolate covered marshmallows.  The biggest problem with them is that the chocolate begins to melt in your hands and gets all over your fingers.  If you have read any of my previous posts, you are probably familiar with my disdain for messy foods and I will try almost anything to avoid getting my hands dirty.  A lollipop is the perfect way to solve the mess of a chocolate covered marshmallow!  You get all the yumminess of the food itself without the sticky fingers.

    Ingredients:

    (yields 6 servings)

    6 Marshmallows

    1/2 cup Semi-Sweet Chocolate Chunks

    2 Graham Crackers (crushed)

    1/4 cup Rainbow Sprinkles

    6 Lollipop Sticks

    1 Sheet of Wax Paper

    * I used Jet Puffed Jumbo sized Marshmallows because they are so huge and fun!  I also used semi-sweet chocolate chunks from Nestle Toll House.  The graham crackers I used are made by Honey Maid.  You can off course use any brands that you would like and any toppings you would like.  Graham crackers and rainbow sprinkles are my personal favorites, but other options could be shredded coconut, Oreos, or even topped off with a piece of fruit.

    On a cutting board or cookie sheet, flatten the piece of wax paper.  Put the chocolate in a microwave safe bowl for about 30 second intervals until the chocolate is completely melted.   Be careful not to over heat the chocolate, as it can burn.  While the chocolate is heating, stick the center of each marshmallow with a lollipop stick about 3/4 of the way through.  Make sure not to poke the stick through the other side!  Begin dipping a marshmallow in the chocolate, covering the marshmallow as little or as much as you want.  Then dip the marshmallow into the topping of your choice and coat the chocolate with a full layer of topping.  Place the marshmallow onto the wax paper and continue the same process until each one is made to your liking.  Put the marshmallows into the refrigerator to harden.  Enjoy your treat!
